Techniques” is their opus maximum. It’s very thorough. They offer a lot of standard techniques and info but present it as though they are revealing a great secret.
Lavishly illustrated, making for good browsing. Many of the recipes lack color photos, but that’s a small price to pay for cramming in more recipes. Besides beautiful to look at the information is invaluable.
Cons
A shorter version of the cooks illustrated cookbook. More recipe's than technique's. The introductory explanation of each technique adds little to what is already explained in the individual recipes.
