I wanted to use it to control and extractor fan as a humidistat but it seems that the very high humidity even with the temperature sensor placed very far away from the shower causes some kind of sensor drift over the course of a few weeks which rendered the humidity sensor reading out useless values

If you want to use an app instead then like most sonoff devices they can be set up in the ewelink app but you will need to pair them to a suitable zigbee hub that connects to the network such as the sonoff zigbee hub
