We have a couple sets of the flat smooth cooking sheets that work great with everything but this one really is better for baking chicken.
They get food so crispy - and drain away any grease, water, whatever liquid that spews out of food and makes things soggy.
I placed the silicone on top of a fitting cookie sheet and through my chicken in the oven at 400 degrees for 20min.

Chicken thighs have cooked up just as moist and tender as they have on a regular baking mat but they get nicely browned all around while the fat from the skin drips away and leaves the skin nice and crisp
