Pros
It's so exciting to be able to eat pasta without the problem of food sensitivities for my wheat and rice sensitive tummy. Many other brands add other flours or binders.
It's great for anyone with gluten intolerance or allergy. It's a plus that it is high in protein as well if you’ve got a picky eater. I no longer eat grains or starch.
Our favorite noodles from this brand are these twisty ones and spaghetti. They seem to be sturdier than the egg noodles i usually use. If you like al dente noodles, this is a good substitute.
We are willing to pay a premium for lentil pasta because it is an inexpensive form of protein, and comparatively low-carb. Lentil has a great tougher chew to it with a relatively neutral flavor.
Cons
This is very easy to overcook and if you do it will turn to complete mush. Like a hummus pasta sauce. Tastes like @$$.
