Deeppocket or “belgian” waffles as the term is used in north america are a relatively new phenomenon owing their fame to three world expositions the brussels world fair of 1958 the seattle century 21 exposition of 1962 and the new york world’s fair of 1964

Prior to 1958 cafés and street vendors in the cities of brussels and liège belgium had served deeppocket waffles for some time and waffles of that style were a noted hit at the 1962 exposition in seattle but it was not until the 1964 new york world’s fair where maurice vermersch in the belgian village served socalled “belgem waffles” about 78 thick topped with strawberries and whipped cream rather than with butter and syrup that the “belgian waffle” fad took off in north america
