The basket's ability to raise/lower to/from the oil with the lid still on is quite nice.
I really like the fact that i can lower the frying basket with the top on and raise it to let it drain before removing the top.

We have not found this to be a problem yet doughnuts and egg rolls but have not measured independently to check the oil temperature
