I had no idea how quality cookware makes such a different when cooking.

I do need to turn the heat up a bit more than in my original calphalon non-stick pan with the heavy bottom.

That is totally caused by mis-use of the product.

If you are looking for something to fry an egg in for breakfast, go with the 10 inch.
