Pros
It has different sized holes for stripping chard or herbs. I have only used it with kale. It works well and seems to be much less dangerous than my potato peeler for gouging out rocks, eyes and rotten spots.
It's compact and lightweight, making it easy to store and use whenever needed. Makes a great christmas stocking stuffer for the home chef. This is one of those random kitchen gadgets that you would never even think about existing but it's brilliant!
As much as she has raved about it i think it is worth a shot to buy one and give it a try! Makes chopping herbs so much easier and saves a lot of time. It's much quicker to just do it the way grandma taught you.
Cons
Half the time the kale rips before the entire stalk goes through. It's best to just cut/rip the kale off the stalk. Tried with rosemary, pulls off a couple leaves then gets stuck and simply breaks the stem off.

The variety of openings allows me to quickly and efficiently strip herbs of various sizes.
I found that threading the thyme from the stem's top, not bottom, through the second smallest hole took everything off the stem.
However, it could be improved with more durable material, option for different colors, and an option for left-handed users.

We grew kale in our garden this fall and i was spending way too much time cutting the leaves off the stems then i stumbled across this tool being suggested on a blog

I cant speak to how it works with other herbs but for thyme alone its worth having

I hate messing with thyme so much so that i usually just put the whole stem in the pot and let the leaves come off during cooking
