First off i gravitate to high end collector knives and very sharp cooking knives.

If you can keep this for years to come with its ability to sharpen even then, the price becomes even more of a bargain.
First off let me tell you that i own about $500 worth of sharpening stones that i bought in japan.
I’ve used several inexpensive manual “knife sharpeners” over the years, all of which were useless.
It was a little pricey but well worth it.
Shipping
This arrived yesterday, and i've sharpened every knife i can find to a razors edge.
So, it arrived today and i spent no time in getting to work on my knives.
If you're a cheapskate, i easily have 20 s***ty as-seen-on-tv options, or worse, that i'd happily send your way if you'll pay the shipping.

Its a lot less expensive than having knives professionally sharpened but overall just as effective and much less expensive

The chefs choice website lists a 15 but the picture beside it shows a 15xv so i figure the xv is just a rename for marketing reasons and i got one without the new label on the front

Those got sharp but not the hair peeling razor edge that the 1095 achieved so my impression is that your results will vary depending on the steel your knives are made from

One thing to know is that it does not sharpen right to the back of the blade as you cant get it into the sharpener see picture

Sharpening with a traditional stone will look better cosmetically but if i was skilled at sharpening by hand i wouldnt be using a motorized sharpener
