Pros

Most of the recipes are simple and tasty. Those ed-clairs are quite tasty. The recipes are exact and in baking it should be noted that exactness is truly a key to successful baking.

Super informative and beautiful. Soooo good. That is pretty empowering, particularly for such a big book.

It gives you the best version of the common basics. I also really appreciate that this book is a hardcover. Some though are not too bad, and some are appealing enough to push past my current baking slump.

This cookbook is beautiful and looks good on a coffee table, bookshelf or open to the page you're working from. There are also some color pictures, which will entice you while making your mouth water.

The book includes everything from cornmeal cakes to croissant crusts. There are also crepes, popovers, custards, souffles and more.
