Pros
Cutting veggies with it is a dream, thanks to the liquidmetal design. The density of this blade keeps the edge sharper longer. It's razor sharp right out of the box, and looks beautiful.

Cons
Shun's kiritsuke is a much better value. The blade feels like it is tin or aluminum. Don't fall for the pictures and astectics of their products. Get a shun for a 60+ hardness knife.

Quality
They have remarkable heft and balance and their look and finish are of master quality.
I already own the shogun series x knife block set, so i knew that dalstrong made quality knives.
The liquid metal design on the side helps some with the food sticking to the blade, but not by much.
In regards to my opinion of the omega series kiritsuki, i have to say that i am disappointed.
Price
I think the stand needs work or left out and lower the price.
Packaging/appearance
It came in beautiful packaging and the leather sheath and wooden stand were nice touches.
As other reviews have said the professional packaging makes it immediately gift able!

I'm a professional chef and have always been a fan of shun and now i'm a dalstrong fan.
A wüsthof knife would not break but that is because the rockwell is much lower than the dalstrong rockwell.
I have always been a fan of wusthof, but this knife is on a way more professional level but less forgiving.

My knife went easily through carrots and glided through onions and i was even able to cut the peel off a tomato

The knife is so dense and so hard that dropping it on the floor may break the knife like glass instead of bending it and or dulling it

If you don’t take care of your knives and drop them on the ground or put them in the dishwasher then get a softer knife like wusthof
