Pros
These are definitely professional quality knives for professional chef's. This is the 3rd chefs knife i purchased. A kiritsuke is meant to be used on vegetables and boneless protein.
Cons
Brands such as yaxell, sakai takayuki and even corporate owned companies like miyabi produce far higher quality knives - ones that pass through the hands of many artisans and take weeks to produce. This knife has much potential, but i'm not sure this ... Read More
The dalstrong is advertised as military grade g-10. There is steel cladding on this knife and the damascus is not etched on.
Sharpness is very poor. The bevel is uneven and is not ground in painstaking 3 step hanbazuke method as advertised.

If you're looking for a quality knife and don't know what to get, then this is what to get -- hands down.
My second knife arrived just a few days ago, and with this one, there was a slight anomaly with the slightly rounded edges of the handle.

Since the issue with this particular knifes handle shaping was made bothersome by the fact that im right handed ill give this one to a left handed friend to see if it might be more comfortable for them left side of handle doesnt have this too hard chine issue so it shouldnt affect their fingers as it did mine

Lately ive been getting a lot of dalstrong knives their collections are some of the most unique ones around for instance if you want your kitchen to feel a little more modern the quantum or frost series is really attractive so far the quality has been excellent i had one that was slightly bent didnt mess with the functionality really that much but i do all my knife maintenance myself with a collection of naniwa chosera stones and having a perfectly straight knife is key i contacted customer service they responded to me within the day and fix the issue in a kindly manner

Way too slippery with damp or wet hands and almost cut myself from it slipping

It’s not curved like a traditional knife so it isn’t suitable for the rocking technique
