Pros

The quality and balance are standout, beautiful. These are excellent kitchen knives. The balance is superb. It looks good, it's well balanced.

The damascus is visually stunning. It’s a beautiful knife except for the oversized handle. It's an 8” blade, i’m more comfortable with a 6’ blade. The blade is very well made and the handle fits well in the hand.

It has a great edge, and with a couple passes on the strop, comes right back. It cuts through meant and connective tissue like it's soft butter. The edge is razor-sharp, and it comes with its own sheath.

Fillet, or boning a chicken are almost a pleasure. Its much more than a fillet knife, its a great utility knife. I'm not a professional at filleting but this is a good knife. Great knife for bbq.

Cons

Quality and sharpness of these knives is very inconsistent. Well it flexed alright. There is no bolster. Boning knives need to nimble.

This knife was hyped up as something for serious chefs and fishmongers. Dalstrong knives seems to be the worst of both worlds with no redeeming attributes.

The dalstrong boxes are too nice to throw away.

I have 3 other dalstrong knives that the handles are perfectly proportioned but this one is oversized for the knife.
