Pros
This knife is razor sharp and built to last a lifetime. It reminds you to only sharpen with whetstones and some good life advice as well! Also this is easier to sharpen on a whetstone.
They are pricey but you see why when you get your hands on one of their knives. Well worth the money. Looking foward to purchasing the smaller one.
The weight and balance make slicing and dicing a breeze. It makes chopping food very easy. Cuts amazing and effortless.
Very maneuverable with just enough mass. The bolster is perfect for a pinch grip. I prefer an oval shape that fills my hand instead of slab sided handle.
After more than a year's use, this knife continues to impress. I’m a professional chef who has used a large assortment of knives. It works perfect, i most say this is amazing quality chef knife, i truly love it.
Cons
The san mai looks like they stamped a line parallel to the edge that is almost deep enough to catch a fingernail in. Yes, there really is steel cladding on this knife and the damascus is not etched on.

Received the knife, cleaned and used it a single time, then put it in my block with the others.
Very appreciative that they stepped up when the quality wasn't solid.

Well worth the price, would definitely recommend!

Competitiveness
I cannot tell about the durability of its sharpness but it seems like a better knife than my other dalstrong knives.
As a chef it’s the best knife i’ve owned.
But i prefer the larger chef knives from dalstrong.
I've been a chef for 20 years.

I stumbled out of my house to seek medical attention but soon realized that the blade had shorn the very atoms of my arm in twain therefore medical attention was not needed

The sheath it comes with is slightly larger then the knife so it rattles around a bit which is concerning and i hope it doesnt harm the knife over time

After a few months the string holding the inset to the knife holster came off so now everytime i use the knife i have to find a safe place for the inset

Very comfortable knife that holds an edge well and has a good weight only issue is that dispite boasting about the corrosion resistance the knife has begun to rust and corrode after only 3 months of use
