These are a good balance of wear and getting things sharp.

Including lapping, i got my wusthof santoku, which was already reasonably sharp, scary/shaving sharp in about 15 minutes.

Not the best sharpening feedback and they soak too much steel residue which doesn't clean easily with a rust eraser.
