Pros & Cons
Pros
This works really well. These knives kick *! My jr.
The price is very competitive, which by the way is exceptional. It comes in a very nice box (i'm a geek for these things) and has a nice blade cover. Very durable. Easy to maintain.
The dalstrong santoku is definitely sharp and the divots on the side are a nice aesthetic while also possibly helping with cutting veggies. Wonderful knife to slice fish with, swordfish and tuna especially. Decent knife own the large meat slicing knif... Read More
Santoku chef's knife is a versatile addition to the kitchen. It's nicer than any of our other kitchen knives for which we paid at least twice the price.
Cons
I'm genuinely rather unimpressed with this knife especially at the price point. It's not very comfortable to work with and it is not ergonomic.
Both knives are dull. After 3 months of very limited use its as dull as a butter knife. The blade is extremely sharp but feels and looks flimsy. The wooden handle on mine isn't flush with the metal spine, so there is a sharp (not knife edge sharp) met... Read More
Highlights
Quality
Perfect hand feel, sturdy, easy to sharpen
You can feel the quality of the knife in holding it, let alone in its ability to cut.
It had no weight to it & couldn’t hold an edge for more than a week at a time.
This particular dahlstrong knife is extremely sharp--for example it dices cherry tomatoes without making a mush.

Got the money the gladiator series is great too!
Depends on how much you want to spend, but you won’t go wrong with these knifes!
Don’t believe me, spend the money you won’t be disappointed!

The quality is very good and even the packaging is perfect.
Competitiveness
I purchased this knife for my wife to replace a santoku knife from another brand.
While santoku knives may often be sold as an alternative to a full-size chef's knife, the smaller size santoku creates its own niche.
It is heavier than the previous brand but has a better feel.

They certainly can do much of what a chefs knife does but the smaller size santoku feels to me at least as more controllable
