Fit and finish are top notch. Compare favorably with my shun knives. Feel and function are superb.
This paring knife is perfect as the weight of the knife has more heft. The handle size fits perfectly for an average sized man's hand. The knife itself has excellent balance and a good heft in the hand.
Timing your prep time becomes critical to serving everyone at the right times. Second most needed knife in the kitchen after the chef knife. This paring knife matches the 9” chef’s knife i previously purchased.
Cons
The handle is very thick and will fatigue you quickly if you’re doing a lot of cutting. What's really disappointing, is that the tip of the knife, came bent to the right. Even with considerable pressure, no dice.
This knife is not made from damascus steel, the markings are an etching on the blade that look like the characteristic signature of folding steel. The bolster gets in the way of sharpening this knife. The sheath is mediocre.
Highlights

They will appreciate the quality of these knives over time.
The gladiator series is with out a doubt a high quality product.
As in my original review found below, i am disappointed in the lack for detail with the damascus print.

I already had the dalstrong gladiator series bird's beak knife and loved it.
Out of pure curiosity and as a possible gift, i ordered the dalstrong shogun series bird's beak knife.
Competitiveness
This was the fourth dalstrong product i have bought, and the third knife as part of an upgrade of my kitchen tools.
I love dalstrong products & the service they provide after the sale.
I also reached out to dalstrong via email and they did not respond to me.
First, let me say that it appears the error was with my email account and not with dalstrong being unresponsive.

The damascus pattern looks more like an appliqué than an intrinsic reflection of how the nice was made as it doesn’t extend towards the ground portions of the blade
