It takes a bit of an adjustment to get it to the consistency that you like but you is the operative word here because this can be a matter of personal taste

You cannot have any cracks in your ice it will break and it must be even or it will not hold

I would go with the high end machine if using to sell commercially because of the ice sometimes is hard to center in the shaver and they can handle larger blocks of ice
