I found it worked better to do the final proof on the baking lid with the bowl over it

Doing the final proof in the bowl it was difficult to transfer the loaf onto the lid without damaging the loaf

Id been baking yeast breads using cast iron and this is far lighter weight and you dont have to waste power preheating the oven and container
