The sharpness is spot on. The kitchen scissors are quite sharp, something we've been missing. The boning shear is also very sharp and cut through chicken bones like butter.

The quality of these are wonderful for a more seasoned cook as they perform much like high end japanese knives. My fiancé is an aspiring gourmet chef and she loves these!

High carbon stainless knife blades are very good quality, very sharp and well balanced. The blades are very well sharpened and ready for kitchen use. They are sharper than our expensive knives and work great.
