Somebody mentioned that this does not make good omelettes as you have to get the pan smoking hot to do that

Sure if youre still using a cast iron omelette pan which takes a lifetime to season but admittedly lasts a lifetime too and a traditional spit and smoke frying technique this does not fit the bill
