One set is about 3 years old and the other is about a year old

They are very thin so will have a tendency to warp unless you dry them in a way that allows for plenty of air circulation around both sides of the board

I will plan to renew the oil coating every couple of months as is recommended for wood probably with some kind of refined coconut oilbased product over mineral oil
