Pros & Cons
Pros
This pan seems to be more non-stick than my cast iron. Using a palm sander and working from coarse to fine sanding disks (followed by a good re- seasoning of the pan) makes the pan surface better. I use these pans on a daily basis as they are the only... Read More
Putting it into the oven is a cinch with the optional silicone handle. Heat distribution is superb and seems as good and long-lasting as french carbon steel. My range is a dual oven type and i much prefer to use the smaller oven.
Carbon steel and cast iron require a little tlc but they will last you for life. Much lighter than my treasured cast iron lodge. It's a cooking so it doesn't rust while not in use or in the warehouse.
This is a real manly pan. The pan heats quickly and cooks evenly. The pans appear to be well made and nicely flat on the bottom.
Cons
When sitting on a glass cooktop, less than half of the pan makes contact. It has a textured surface that is far from non stick. The coating is unnecessary in a real carbon steel pan.
It seems that lodge intentionally screws this up so their factory seasoning adheres easier. It's far too thin and has pointed edges. But that seems super careless and sloppy on amazon’s part.

The pan has a very significant warp that gets worse as it heats.

After the 5-minute diy session it's damn near perfect and i saved $90.
For the price what you get is a damn good deal.
These are good pans, and are pretty inexpensive.
Competitiveness
Carbon steel pans of this weight and this size are usually twice as much from a even a mediocre brand, and three times as much ... Read More
I bought the larger sizes in a more expensive pan because i wanted to try out the other brand.
