Use a remote thermometer to set your brisket in around 160 degrees. Jerky comes out perfect at about 170 degrees. Amazon has everything you need.

I figured it was worthwhile to help people hopefully avoid flushing $200-ish down the drain because of a * product. Thankfully amazon is such a wonderful company with excellent customer service and setup a return for the faulty product.

After 2 uses the temperature control became very erratic and fluctuated anywhere from 185 to 325 without moving the dial. As soon as it's plugged in it trips the breaker in the electrical panel. The temp only reaches a maximum of 250 degrees.

They build it wrong then want me to pay for shipping of replacement parts?
