Pros
It takes a little more patience, and finesse. Everyone is always in a hurry for instant gratification. Because it does what it says. That is very useful in guiding you.
The quality of the pan is top notch. The matfer bourgeat pan is manufactured in france. I care for the pan the way dione lucas demonstrated on her early tv shows.
Heavier pans take longer to heat evenly, but sear better than lighter ones, which are more nimble to use. I always sear in my 12” iron skillet. The matfer bourgeat is a heavier pan, but still much lighter than cast iron.
The 14 1/8 is a beast, and will pose a real challenge to a woman using it. The size of this one is perfect for single fried egg, salmon filet, burger.
This is an heirloom pan that will last at least your lifetime. The post-carmelization oven cook through trick. This is the best pan i've ever used! No joke one of the best pieces of cookware in our kitchen.
Cons
Is this a prank? It's like trying to scrub the pink off a pig. The term nonstick is very incorrect. It seems like some people get an (eventually) removable coating, and others get permanent.
These pans retain heat but do not evenly distribute heat. The one downside, which is major is that the pan warps badly. This pan is not suitable for flat cooktops.
