After you're done cooking and have rinsed it out, dry thoroughly and place a tiny amount of high-smoke point oil on a paper towel and wipe the inside. Since then it continues to work fine.
Cs cookware has superior heat conductivity, durability, versatility, and affordability. Would recommend for anyone not interested in teflon or stainless steel cookware. I cook on a gas stove and this pan gets smoking hot.
In matfer pan for a two or three egg omelette is superb. This comically large pan is a game-changer in the kitchen. Even though it is steel, this size pan is still ight enough to toss ingredients by hand.

Cons
The bottom is concave even though this pan has never been heated on any type of burner. The pan was shipped with zero padding. There were also several dings on the cooking surface. Don't have this problem with smaller/thinner crepe pan.
The instructions provided are not sufficient. Terrible packaging. Pretty much unusable. And lastly, matfer's return policy is suspect and arbitrary.

It is a tad heavier than i expected, but the quality is obvious and should last for many generations.
The lesser brand was far too thin, and the pre-seasoned finish was awful.

Spent 30 minutes on the potato skin seasoning method.
The seasoning didn't take too well initially maybe because i didn't clean the pan well enough out of the box.
Competitiveness
It has seared supermarket steaks on up to waygu with ease.
Night and day difference as compared to a china made competitor that i should never had bought.

I just got mine and it came in plastic bag which is what matfer is doing now adays and not coating it for travel

Because of the size the outer edges of our pan cooking surface are bigger than our glass cooktop burner size
