Being able to do that while im somewhere else doing something else changes things in the same way as having a cordless telephone instead of having to stand in the hallway at the alcove to have a conversation younger people ask your grandparents

As im sure youve read you can set an upper and lower temperature on each of four probes and if the temperature varies outside of those settings the unit will alarm
