For some reason this pan accumulates and holds heat so that even with our electric cooktop turned low pancakes have a heavy surface and are not light and fluffy inside

If you are in the habit of starting your burner on high heat make sure you turn it down after 23 minutes of heat up

You arent supposed to go over 600 degrees but a pan on high for 5 or more minutes will pass that up
