I think you need to make the crust on the thinner side and just let the stone get super hot to have a crisper crust

You do have to keep an eye on the wood as it burns pretty fast but not as fast as some reviews state and was easy to maintain 600 consistently

The only thing is i thought i bought the oven it has both wood and gas attachments and it did not
