I've experimented with different lengths of time and found that 15 hours will result in a yogurt that's similar in consistency to what you might buy off the shelf at a mainstream grocery store, while, say, 10 hours gives you a thinner, more liquidy, more european/australian style of yogurt (which i happen to prefer).  Read Less
