The flour blend recommended by atk is by far the best i've tried! And best of all it uses ingredients i already have in my gf pantry. If you buy in bulk and freeze their mixture, it lasts a very long time with very little degradation.
Make each recipe once per their specs, then start deciding what to take out or reduce. Some are excellent, like the bagel recipes. Just the recipe for brazilian cheese balls and buttermilk waffles are worth buying.

It seems to me that atk was just phoning it in with this book. The authors make many inaccurate statements. As you can see by the video there are markings on the back cover.
Use of psyllium husk is not a breakthrough. The cornmeal component gives the dish a sawdust mouthfeel. The bread recipes are all dependent on using psyllia husk, a laxative.
A typical cookie recipe is 3 pages long. The florentine cookies call for 1/4 cup of orange marmalade. They do a disservice to gluten-free home cooks everywhere.
