Pros
The product is gmo-free, gluten-free, and has zero trans fat. It has penicillium which generally is safe for people with allergies to eat. I'm on a soft/pureed/liquid diet and am so pleased to have found something that is easy to use and tastes good.
This is definitely taco or nacho flavored. It's not too spicy and it complemented all the ingredients in my nachos without being too overpowering.
This powdered cheese is perfect for people like me who have changing tastes. The alfredo sauce is perfectly fine without anything added to it. It’s a powder that you can mix with water, if you want, but i love it in powder form.
It makes a great pasta sauce for spaghetti. It's absolutely fabulous over elbow noodles and some cooked ground beef or turkey.
Cons
Despite being marketed as some sort of amazing cheese powder that works for everything, this stuff is nacho cheese powder, plain and simple. The flavor just isn't'mac & cheese' flavor, it's 100% nacho cheese flavor.

I'm so impressed with the flavor the this spicy southwest cheese sauce mix.
We could not find a jarred alfredo sauce that we liked so we tried the hoosier hill farm option and were very pleased with the results.
Packaging/appearance
It's great that this is shelf stable and i don't have to worry about having fresh cheese in the fridge.
Competitiveness
This is a good mix to have on the shelf for a quick meal, and it’s made in the usa.

I was very shocked to find that once i actually got the stuff mixed up it tasted just like nacho cheese
