Pros
The knife comes razor sharp from the factory and seems to hold its edge well. Light, very sharp, excellent price and arrived promptly. There is a reason these are a favourite in professional kitchens, they're durable so will last for years.
This knife is a pleasure to use. Very well presented. Very versatile. Incredible value. Absolutely love it.
Victorinox is a brand best known for its swiss army knives. The knife is a little on the light side, which i think is good, because maneuvering is less exhausting. All this for a fraction of the cost of a german knife.
Another victorinox carver was recently purchased but with a serrated blade. A 6- or 8-inch straight edge carver is ideal for slicing hard and semi-hard cheeses.

Firstly i can see this is a great product!

Packaging/appearance
Very sharp edge out of the pack, a little light in weight so bear this in mind if you prefer a bit of 'heft'.
Competitiveness
Most have a moulded 'fibrox' polypropylene handle that is well-textured for a positive grip regardless of the hand being wet or dry.
All this for a fraction of the cost of a german knife.

The two issues i found with are the knuckle clearance and the hardness

Our existing straight edge carver seems more often to fail to carve a joint neatly than it once did despite being sharpened and honed before almost every use it was an inexpensive purchase and probably due for replacement after about 15 years

If required there are versions with riveted wooden handles but about 35 more expensive

Longer blades can also be difficult for the inexperienced to use safely

Unfortunately victorinox do not include a blade sheath and few knife blocks will accept a blade this long a sheath will protect the cutting edge but is also needed for personal safety

They also fail to provide care advice for either of the two knives which would be useful to have it is invariably included with almost all cookware but rarely with kitchen knives and no less imperative
