The knife is fine its not high end but the steel takes and holds an edge for a reasonable length of time but the handle material isnt very good despite its texturing you should use micarta or better type of plastic probably with glass spheres in it and the texture should be more pronounced

Working with meat invariably means you get slippery hands from the fat of the meat and the texturematerial excaserbates the problem i realise you cant eliminate this issue but your designers need to use the product and think of the issues that will affect the user and design it with a more suitable material
