Pros
Great for trimming fat and silverskin, good size for making stew and stir fry. Flexible blade is especially handy for shaving thin onion cuts for stir frying.
This would be that one knife to put in the grub box. Just as good as the dalstrong omega series and 1/4th the price. Great value for a stainless steel knife.
Very agile around bones with complex shapes. The handle is easy to grip even with wet and greasy hands.
Cons
No thrills or any quality gained from it but. There are cheaper knives that accomplish far more.
The knife i received is not the same as the one pictured above. Flex means wobbly. It’s possible i was just sent a defective knife.

Got this for cleaning up cuts before throwing them on the smoker.
Little disappointing in the packaging it was unwrapped.

It will lose its edge faster than carbon steel so its important to have a few whet stones in your kitchen

It does not do well with typical sharpening steels and even done gingerly youll get a rolled edge with burrs

Stainless steel is not my number one choice in knives but i have to admit that if i were for some reason limited to one knife out somewhere on a camping trip or such this would be that one knife to put in the grub box

All i knew about victorinox was their swiss army knife which is great but not much use for cutting meat

The mercer lasted me over a year but cant even put a good edge on it anymore and not worth the expense of having it reground
