If more strokes do not bring the edge true the knife is either not properly sharp to begin with or the edge is soft and particularly susceptible to bending over

Some day i would like to try the 34helical34 cut version but i cant see why this one should not last the rest of my life if it is properly maintained and not allowed to bang into other utensils when stuck in a drawer or allowed to get wet without thoroughly drying
