This knife glides through everytime,its superb. Super-sharp; it makes light work of even the freshest, crusty sourdough.

In recent years i have purchased knives that are worse than useless, particularly the last one which tore the bread to shreds.

Victorinox are great, i've used them from being a trainee chef to now.
Brilliant, especially when compared to previous knives i have owned.

Before i had to wait until the bread was quite cold and even then my previous bread knife judge sabatier 20cm8 bread knife which even though still relatively new was not really able to cope with a good cut

Be aware knives dont stay sharp for ever so even the best knife has a life span

Do note that the handle will discolour marginally if you put the knife in the dishwasher as my husband did in a bout of helpfulness

I assume some sort of coating for the wood probably dissolved or wore off during the washcycle
