Pros

The victorinox-swiss army knife is very sharp and comes with a plastic blade protector. The ergonomics are spot on. It is easy to keep clean and store, easy to sharpen.

Slices easily and straight through homemade sourdough. We haven't scrunched any loaves yet, but there's still some sawing.

The victorinox serrated knife is very sharp. The serration makes sharpening easier with some rolled up, high grit sandpaper. After 25years if sharpening figured time for new knife.



Cons

The knife is not very sharp. In fact there was a burr left on the edge. Blade as slants backwards, making a total mess of an expansive loaf.

My experience seems incongruent with the rest of the reviews here. I will be purchasing a different knife to replace this one. Just very disappointed.
