Pros
The blade is quite stiff and mine arrived virtually razor sharp. There is quite a bit of curve to the blade which actually is an advantage over a chief's knife when slicing.
I buy whole ribeyes, tenderloins and other big chunks of meat at costco or other places depending on sales. Cuts through slabs of rib eye with ease, and pork just as easily. I'm a meat cutter at a major grocery chain, and this does the job!
This knife speeds the process of breaking the big chunks down into home grinder sized pieces. Using this knife to get the initial filet off so quickly makes it completely worth it.
Cons
Would not stay sharpen. Had to keep stopping while cutting up a new york strip *.

About 30 minutes of slow and careful thinning moving up to 800 1000 grit has it where i want it then to maintain just a few strokes on a 2000 to the secondary cutting bevel every two or three days then going back to thinning only when needed and you start to get resistance sliding through cuts
