    The only time i use a different knife is when i need something heavy to break through a hard gourd and i dont want to dull my forschner or i need to cut something very small like a box of button mushrooms

    I place the tip of my steel on a surface and hold an angle and gently glide the blade down it for my more brittleharder steel knives my mundials and german steel knives just get run down the steel like the tv shows and are obscenely sharp for reference ive tried both methods with the knife in this article no go
